Key Notes
The size of the agaves are not large (size of basketball or a bit larger)
Purple or dark brown spots mark a very ripe maturity of the agave
El Pandillo uses “jima media” (medium cut, 3 dedos/fingers cut), so they leave some of the green leave part during harvest, but not too much
They harvest the agaves fresh and process them shortly afterwards
