The yeast used at El Pandillo for the propagation is from Felipe’s grandfather, coming from La Alteña – a proprietary multi generation yeast
Most of the fermentation is done in Stainless steel tanks and are open fermentation, so the yeast from the surrounding area can also come in through the air and it changes every season.
The fermentation can be faster or slower depending on the temperature of the season.
The tanks are wrapped in cardboard and wooden plank – it helps with insulation, keeping the temperature steady.
A few batches are made in wood fermentation tanks. They are made with pine wood. The batches made with these tanks are called “de madera”.
