Key Notes

There is water on the floor and it creates a humid environment for the barrels.
Most of the barrels are George Dickel Tennesse Whiskey barrels. They are old barrels and not recharred – very different style vs bourbon.
It is a “light” aging style
A new barrel house is being constructed and new barrels will be sourced. The future flavor profile may change (recorded in 2023) due to some new barrels being sourced like new French oak barrels.
