First quality tequila comes from first quality agave
The Camarena family historically supplied and grew their own agave for Tapatio, though it is no longer possible. As a result they know their agave has great quality.
Care starts from the baby agave (hijuelo). They pick only the healthiest and biggest, and they plant it first in a “nursery field” to grow stronger and then replant them into their final place.
To produce Tapatío, the Camarena family is looking for “pinto” agave, agaves that are overripe and matured the longest time possible providing the important higher acidity.
