Key Notes

  • The clay brick oven gives a certain minerality to the flavor
  •  Tapatio use two different extraction methods, roller mill and tahona
  • The more efficient is the roller mill – it crushes the agave for the juice
  • The tahona is less efficient but has more complexity – the fiber and the juice keep interacting and the tahona stone adds some further minerality that can  even create smokiness in the flavor
  • The fibers from the tahona is fermented together with the juices collected
