Tapatio is a double distilled tequila
During distillation, the heads and the tails are separated – they optimize the ethanol concentration while minimizing the methanol concentration
At La Alteña they use copper pot stills and distill in small batches.
The biggest still for second distillation is only of 1000L capacity – this helps maximize the surface area of the copper interaction with the liquid
They also use stainless steel – it also has copper inside. The coppert helps naturally filter the sulphur compounds generated during fermentation
The distillers are also a third generation family – the third generation of the Coronado family
The same stills that the first generation were using are still in operation!
