Key Notes

 

  • Tapatio is a double distilled tequila
  • During distillation, the heads and the tails are separated – they optimize the ethanol concentration while minimizing the methanol concentration
  •  At La Alteña they use copper pot stills and distill in small batches.
  • The biggest still for second distillation is only of 1000L capacity – this helps maximize the surface area of the copper interaction with the liquid
  • They also use stainless steel – it also has copper inside. The coppert helps naturally filter the sulphur compounds generated during fermentation
  • The distillers are also a third generation family – the third generation of the Coronado family
  • The same stills that the first generation were using are still in operation!
