Key Agave Facts
Control over the process from the beginning – Hijuelos are carefully selected for the new plantations
Selective harvesting – instead of harvesting the whole field at once, only the properly matured agaves are selected and harvested.
Organic Cultivation – They strive to live together with the environment by creating a natural balance. They leave grass and herbs (that do not compete with the agave for resources) for the bugs, so they leave the agave alone as they have other (better) source of food.
Agave Maturation – It takes approximately 6-7 years to grow and fully mature an agave plant. It highly depends on when and where it was planted as well as the climate.
