Key Hydrolysis / Extraction Facts
Brick Ovens – Capacity of 18 tons, but could be filled with up to 20 tons of agave.
Slow hydrolysis – 24 hours of heat (“cooking”) and 24 hours of resting period.
Roller Mill / 4 Steps – a “simplified” version of the tahona (more efficient).
Brix control – this process helps the producer reach an optimum sugar content for the fermentation.
