VIVA/4.5 – Production | Stabilization and Aging (ESP)

Key Notes

  • American Oak barrel aging – there is no standard time. The aging time depends on how used the barrel is.
  • Blending – using no additives means that the house needs to rely on blending different barrels. If the barrels give a too “weak” flavor profile, a correction is done with older tequilas. So a reposado may be corrected by an añejo etc.
  • No coloring added – the color of Viva Mexico products may be different for each batch resulting from the natural color of the barrel being different for each blend.
  • Manual bottling – the family is keen on supporting the local community with extra jobs, creating an even more “artisan” process which also comes in handy when having to adapt to different labeling requirements of different brands.
