Key Notes

  • The agaves are selected based on maturity
  • The agaves are cut in half and the cogollo is removed
  • For the brick oven usually there is a 24 hours cooking time and 24 hours colling time
  • All kind of yeasts are used by Tequilera Viva Mexico as they also produce tequila to other clients. Viva Mexico is their own house brand owned by the family.
  • They play classical music during fermentation it is a house speciality. The fermentation is longer in winter, shorter in summer.
  • The tequila is double distilled in copper stills.
